Ageing: 8 months in the fermentation vessel. Punches 25%, and 75% stainless steel, with battonage.
Preparation: Harvested by hand and stored in small baskets. Fermentation of 25% native yeast in French oak punches and semi-muidos (500-600 L. barrels, respectively). 75% of fermentation in stainless steel tanks.
Pairing: Sashimi, Smoked Eel and salad with orange
