GRAPES: Pinot Noir.
AGEING: 12 months in Allier French oak barrels, new and one year.
PREPARATION: destalked gently to try to maintain the maximum whole grains, conducting the fermentation in small stainless steel tanks.
PAIRING: duck, roasts, cheese beef, sausages, stews, feathered game and red meat sauce.
RECOMMENDED SERVING TEMPERATURE: 18 °C
